Along Suthep Road, inside the glass-walled Royal Project shop, artichokes, Brussels sprouts and cherry tomatoes all arrive as harvests sent down from highland villages. Their story begins in the 1960s, when the Thai royal family, determined to end opium farming, set out to support hill communities in growing cash crops in place of poppies. Head southwest and Wat Phra That Doi Kham crowns the hilltop, its 1,300-year-old chedi and 17-meter seated Buddha gazing quietly out at the mountains, while worshippers lay down garlands of jasmine to give thanks for a wish fulfilled.
